Cold Busting Soup Recipe🍜

With flu season still looming over us, we’re sharing this Cold Busting Soup Recipe. It’s packed with Vitamin C to help reduce symptoms and anti-inflammatory fatty acids. The perfect meal for a sick day.

Ingredients:
-1 cup basmati rice
-2 tbsp garlic-infused olive oil
-4 big handfuls of spinach
-1 cup frozen corn
-3 tbsp extra virgin olive oil
-2 1/2 cups cooked, diced chicken (can used canned)
-5 cups water
-2 chicken bouillon cubes
-1/2 cup coconut milk

Instructions:
1. Cook basmati rice in a rice cooker, salt if desired
2. Sauté spinach on the stove top in garlic-infused olive oil until soft
3. Microwave frozen corn until defrosted
4. Pour regular olive oil in a large pot with cooked, diced chicken
5. Add the rice, spinach, and corn & cook on low
6. Boil water and add chicken bouillon cubes and coconut milk
7. Add the broth to the pot and cook on low for 10 minutes
8. Enjoy!
