Gluten-Free Banana Bread Recipe

Gluten-Free Banana Bread🍌
This yummy banana bread is delicious on its own, or topped with peanut butter and honey!

Ingredients:
-2 large, ripe bananas
-2 large eggs
-1 tsp vanilla
-3 tbsp honey
-3 tbsp coconut oil (melted)
-1/3 cup coconut sugar (can use regular if desired)
-1 cup gluten-free flour
-1 cup oat flour
-1/2 cup peanut flour
-3 tsp baking power
-Tiny pinch of salt
-1/2 cup chocolate chips (optional)

Instructions:
Preheat oven to 350 and line a loaf pan with parchment paper. In a large bowl, mash bananas together until they’re mush. Then mix in the wet ingredients. Fold in the dry ingredients, and mix again until smooth. Add in chocolate chips if desired. Pour batter into pan and bake for about an hour. Check at 50 minutes with a toothpick to make sure you don’t overcook. Enjoy! 😋

The Plant-Based Food Craze Continues!

White Spot is set to join the plant-based food craze with their new “Beyond Burger” patty! 🍔

On Monday, April 15, the restaurant debuted the Beyond Burger patty, offering vegetarian and vegan customers a fully plant-based vehicle for its Triple O sauce, which is, of course, the real star of any burger on the White Spot menu. It tastes like the mayonnaise they serve in heaven. It should be noted that mayo disqualifies the Beyond Burger as vegan. But we digress.

Available at all full-service White Spot restaurants in B.C. and Alberta, the four-ounce, chargrilled veggie patty, made with pea protein, can be added to any burger in place of a beef patty! 🌱 But if you’re the sort that hates to request menu substitutions, the Beyond Burger patty will be featured in the new Avocado Beyond Burger, which also comes topped with fresh avocado, pickled onions, roasted corn, crisp lettuce, vine-ripened tomatoes, jalapeño ranch and edamame hummus. Yum! 😋

Smashed Brussels Sprouts

Ingredients:

  • 1 pound brussels sprouts
  • 2 tbsp olive oil
  • 1 pinch garlic powder
  • 1 pinch red pepper flakes
  • Sea salt and black pepper
  • ¼ cup grated Parmesan cheese

Directions:

Preheat oven to 400 degrees. Line a baking sheet with parchment paper. Trim brussels sprouts and remove any yellow outer leaves. Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add brussels sprouts, cover, and steam until tender (about 10 minutes.) Drain well. Toss brussels sprouts with olive oil, garlic powder, red pepper flakes, salt, and pepper. Spread out evenly on baking sheet. Use a mason jar or other heavy object to press brussels sprouts into flat patties. Roast in the preheated oven for 15 minutes. Cover with Parmesan cheese and broil until cheese starts to brown; about 2 minutes. Yum!

Healthy Pumpkin Pie Recipe!

With Halloween right around the corner, curb treat cravings with this delicious Healthy Pumpkin Pie recipe! Only 141 calories per serving (room for seconds anyone?) Yum!

Ingredients:

  • 1 can (15 oz) pumpkin puree
  • 1 (13.5 oz) can full-fat coconut milk
  • 1/4 cup rolled oats
  • 2 tbsp ground flax
  • 1/3 cup coconut sugar or brown sugar
  • Pinch of pure Stevia (or 2 tbsp extra brown sugar)
  • 2 tsp cinnamon
  • 1 tsp pumpkin pie spice
  • 1/2 tsp salt
  • 1 tbsp pure vanilla extract

Instructions:

Preheat oven to 400 F. Blend all ingredients together until smooth, then pour into a prepared pie crust (view recipe below) in a 10-inch round pan. Bake 27 minutes (it will still be underdone after this time, which is okay!) Let it cool, then refrigerate at least 5 hours uncovered for the pie to thicken and “set.”

Crust Recipe:

  • 1 1/2 cups whole wheat pastry flour
  • 1 tsp salt
  • 1/3 cup sugar of choice
  • 1/2 cup vegetable oil
  • 2-4 tbsp water

Preheat oven to 200 F. In a large mixing bowl, combine all dry ingredients. Add oil and stir. Add water as needed until it just sticks together but is not gummy. Press evenly into a 10-inch pie pan. Put the crust in the oven and immediately increase the temperature to 350 F. (The crust will rise, just press the pie crust back down afterwards.) Bake 15 minutes. Let cool.

Pumpkin Peanut Butter Dip

We approve of eating apples and celery alone, but combining them with this dip will give you a major vitamin-A boost. And let’s be real, if a snack is healthy and tastes like dessert, we’re going to eat it again (and again and again!)

Ingredients:

  • 1/2 cup pumpkin
  • 1/4 cup plain low-fat Greek yogurt
  • 1/4 cup peanut flour (or PB2)
  • 1/4 cup baking stevia
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon pumpkin pie spice

Directions:

Place all ingredients in a small bowl. Stir until smooth and creamy. Keep refrigerated and serve chilled. Serve with apple slices or eat alone.
